This recipe is great for dinner, but also great for a party. “Chiles ‘n Chicken Cups” is one of my own creations. It has been a regular staple in our dinner menus for years. Enjoy!
Chiles ‘n Chicken Cups
1 cup cooked diced chicken
6 oz. cream cheese, softened
1 small can diced green chiles
1/4 cup chopped ripe olives
6 oz. shredded sharp cheddar cheese
10 oz. can refrigerated flaky biscuits
Mix 1st five ingredients together. Separate flaky biscuits and place in bottom and up sides of a greased muffin pan. (You do not use the entire biscuit, break apart to make more like pastry dough) Spoon mixture into each biscuit lined cup. Bake at 375 degrees for 20-25 minutes.
