Here’s the Dirt…Mimi’s Baked Pimiento Cheese

This is my Great Aunt Emily “Mimi” Harris’s recipe. Mimi is 91 years old and is still living in Winterville, Georgia. I remember as a child her serving this dish whenever we visited. To this day, whenever I fix this side dish, it receives raves. Even the ones who don’t care for pimiento love this dish.

Mimi’s Baked Pimiento Cheese

12 slices white bread, trimmed
1 cup milk
1 cup water
3 eggs
1 lb. sharp cheddar cheese. grated
1 medium jar finely chopped pimieto
2 Tbls. butter
salt and pepper to taste
dash of red pepper or tobasco

Combine milk, water, butter and seasonings. Bring to boil. Trim bread, breaking into pieces in mixing bowl. Pour liquid mixture over bread and let set about 15 minutes. Add grated cheese, pimiento and beaten eggs. Mix well and pour into well greased baking dish. Bake at 350 degrees until golden brown. (About 1 hour)
