Just in time for summer, this is a great cold side salad to serve at your next cookout!
Corn Salad
2 (15 oz.) Cans whole-kernel corn, drained
2 cups grated cheddar cheese
1/2 cup or less mayonnaise
1 cup chopped green pepper
1/2 cup chopped red onion
1 (10 oz.) bag chili corn chips, (Frito chili flavored), coarsely chopped
Combine corn, cheese, mayonnaise, green pepper and red onion.
Stir in corn chips just before serving. Cannot be refrigerated after corn chips are added.
