Here’s the Dirt…Billie’s Upside Down Parmesan Potatoes

What can I say? I seem to always make this dish anytime I have a dinner party at the cabin. It is easy to make and always a crowd favorite.

Billie’s Upside Down Parmesan Potatoes

1 stick butter
2-3 cups shredded parmesan cheese
8-10 red potatoes-medium size

Preheat oven at 350 degrees. Wash potatoes and cut once lengthwise. Melt butter in 9×13 casserole dish. Place a small mound of shredded parmesan cheese on the melted butter and place one potato (cut side down) on each mound of cheese. Continue process with each potato. Bake uncovered for 45 minutes to 1 hour. Remove with spatula. Flip cut side up and serve. Salt and pepper to taste.
